Sweet Potato Salad

I love this salad, firstly because it tastes fantastic and secondly, it keeps you full for hours. I am not a fan of buying french fries at the beach, just because other vegan options are sometimes hard to find. But I love my potatoes. This salad is the perfect snack when spending the day out and about. Sydney has an extreme heat wave at the moment and people are spending a lot of time near water. So plan ahead a little, bake your spuds while you are packing your swimmers and take the salad with you!
